Sorry, I re-read your original post. Have a look at local_recipient_maps
and local_tansport.

I think what you are really trying to achieve is that
foo@xxxxxxxxxxxxxxxxxxxxx goes to foo@xxxxxxx (so no local delivery
really).

You can think of your backupmachine.bar.com as a mail gateway.
